A Tompouce (also know as Tompoes) is a typical Dutch pastry. It consists of a thick layer of pastry cream, sandwiched between two layers of puff pastry. Have you ever had to read text from a cheap dot-matrix printer which is not aligned quite right, so that the tops of the letters are either darker or lighter than the bottoms?
